Scallop Gumbo

This gumbo is a great dish for the seafood lover.
Serving Size:

Ingredients:
2 pounds small scallops
2 pounds fresh okra, sliced 1/4" slices
2 medium onions, chopped
2 medium bell peppers, chopped
1/2 cup celery, chopped
4 tablespoons cooking oil
3 tablespoons flour
3 medium tomatoes, cut up
2 cloves garlic, minced
Salt and pepper to taste
Preparation:
Combine flour and oil in a large heavy pan or Dutch oven. Cook and stir over medium high heat until roux turns a dark, rich red brown color but is not scorched. Add onion, bell pepper, and garlic. Slowly stir in 1 quart of water. Add salt and pepper to taste. Add cut-up tomatoes, okra and celery. Cover and cook about 30 min, until vegetables are done. Add scallops and simmer an additional 6 minuntes. To serve, mound hot rice in soup plates and ladle gumbo over the top.
