Cheese (Queso Oaxaca)


Description:

    Queso Oaxaca is a white, semi-hard cheese from Mexico, similar to unaged Monterey Jack, but with a mozzarella-like string cheese texture.
    It is named after the Southern Mexican state of Oaxaca where it was first made. Queso Oaxaca is also known as quesillo, or thread cheese when shaped like a ball. Shaped in bricks for slicing, it is called asadero(meaning "roaster" or "broiler") or queso quesadilla
    Little is known about the origins of the recipe, but most people agree that it came from a small town by the name of Ethla. Although the recipe for Oaxaca cheese is very similar to Mozzarella's, the cooking methods used to produce Oaxaca cheese clearly differentiate the final outcomes. The end results are significant, and therefore making Oaxaca cheese a true Artisan Cheese.
